Strawberry Orange Salad with Glazed Almonds Sheryl Buroughs – served at April 2010 Sew and Quilt Event with Sue Hausmann
Almonds: 2 Tbsp butter, melted ½ c. sugar 1 egg white 1 cup sliced almonds Preheat oven to 325 degrees. Pour butter into a 9 inch square baking pan. Combine egg white and sugar in a small bowl and beat with a whisk until frothy. Stir in almonds and coat well. Pour into pan. Bake 20 minutes, stirring every 5 minutes. Remove to waxed paper to cool. When cool, break almonds apart.
Salad: 1 – 9 oz pkg romaine lettuce, torn into bite-sized pieces 3 cups baby spinach leaves 20 strawberries, halved 1 – 11 oz can mandarin oranges, drained 6 green onions, chopped To prepare salad, combine romaine, spinach, oranges, strawberries and green onions in a large bowl. Add almonds. Shake dressing to blend; pour half the dressing over salad. Toss gently. Serve immediately. Refrigerate remaining dressing. Serves 12.
Dressing: ¾ c. sugar 1 ½ Tbsp. poppy seeds 1 tsp. dry mustard 1 tsp. salt 1/3 c. cider vinegar 1 ½ tsp. onion juice or 2 tsp. grated onion 1 c. canola oil Blend sugar, poppy seeds, mustard and salt with a mixer at low speed. Add vinegar and onion juice, then beat at medium speed 3 minutes. Gradually add oil in a steady stream until mixture is thick. Pour into a jar with a lid and refrigerate until 30 minutes before serving. |

ANNOUNCEMENT! Several years ago, Ron and I saw the movie, “Bucket List”. The message to us from this movie was profound. It illustrated the value of getting all of one's "wantado's" done in this lifetime. Since my lease on the building will expire at the end of May, we have decided to retire from the sewing machine sales business in order to pursue our bucket list. Doing maintenance on your Viking has been of major concern to us. Since Ron is a certified technician, Viking will still allow us to order parts as needed. Contact either Ellen or DJ to make arrangements for drop-off. |
